Since my last update I have given the body a semi-gloss clear coat, put the neck together and on the guitar, and drilled holes in the pickguard. Last night I bought a modern PAF wind boutique pickup (normally $75, I got it used and in working condition for $10!). I still need to order a floyd rose tremelo and get the guitar wired.

Sweet! Noticed the two other pickup holes, here's hoping they'll be filled as well.
Since we're on the topic of guitars here, I've decided to take a look at my local store and found some nice standard Teles for 500, and some special fancy ones with humbuckers for less (Squier). Do you think I should go standard or go with the humbucker one?

Eddie disagrees. Get yourself a nice set of Seymour Duncan Humbuckers off of someone on craigslist and you won't regret it. It really does depend on what you like to play though.

I'd look used if I were you. I've never bought a new guitar. Ebay and CL are great places to find excellent deals.
I have no prefrence on type, I've never played a Tele

The humbucker is the only functioning pickup on the guitar. The humbucker is an old Gibson PAF out of one of his other guitars.
The single coil was never hooked up.

Only one pickup functioned on the guitar, his old Gibson PAF he stole off another of his guitars. I bought a modern recreation of a PAF

Right now I find myself playing a bit of Police (hence wanting a Tele), a bit of fingerstyle (will be my first electric), and a bit of lead stuff (specifically Waters-era Floyd). I'm aiming for versatility right now. My original plan was to get some SD neck pickups and call it a day.

Everything you just listed makes me want to say single coils. Humbuckers tend to lose a bit of articulation in exchange for sustain and high output, and if you are fingerpicking and going lead, you'll want that dynamic range on a single coil. You can always roll on a bit of extra low end with tone control or EQ.
That said, not all pickups are made the same. Try some out, see what you like the sound/feel of.

Alright. I had a pretty dumb reasoning for the humbuckers (the Police Tele has a PAF), but I looked over the web and apparently they could make a Tele more versatile. That's my main goal here, not really aiming for much of a specific tone. I do remember the Tele stock pickups seeming to be notoriously twangy, can't remember if it was the bridge or the neck.

Bridge is the twang, neck is smoother. If you want best of both worlds, try to find a guitar with a single coil neck, and a bridge humbucker that's been wired to split the coil (I know they're around, but I haven't looked lately to point you in the right direction.) Basically, its a tone control that lets you either use a single coil of your humbucker, or use both. That's far and away the most versatile setup you can find, I'd search around for one like that.

Thanks! I'm looking around on Canadian Craigslist right now, planning to just do the split coil myself. Is it an easy mod to perform?

Honestly, I've never done one, so I'm not sure. Basically all you're doing is putting a switch in between the two halves of the humbucker, so it seems like it'd be easy. But if its just that 42 guage wire buried under tons of wax, it might be a bit of a pain. I'll have to leave that research to you also.
